01, About This Service
A commercial stove burner that won't light at morning prep stops your kitchen before service begins.
Commercial range repair and commercial stove repair in Los Angeles are the same job to us: restaurant ranges with the oven below, French tops, salamander broilers mounted over the range, open burners, commercial gas ranges, and high-BTU wok ranges. One tech, one visit, burner top and oven cavity both.
The most common commercial stove failures we fix in Southern California are open-burner ignition problems (worn thermocouples, clogged pilots, failed spark igniters), weak or yellow flame from clogged orifices or low gas pressure, and zone gas-valve failures that kill a whole burner bank. Open-burner ignition and pilot/thermocouple faults are the single largest share of our commercial stove calls; flame-quality issues from clogged orifices come next; full gas-valve assembly failures are less frequent but take a burner bank down entirely. Electric and induction ranges fail differently — burned-out elements, failed infinite switches, induction control boards — and we cover those too. Most commercial stove repairs land in the $200–$700 range; the $120 commercial diagnostic is waived when you approve the repair.
A commercial range with a dead burner section during service means reduced cooking capacity, slower ticket times, and a kitchen that's working around its own equipment. We dispatch commercial stove and range calls same day because a burner failure at 10am can become a dinner service problem by 5pm if it's not addressed.
Commercial stoves and ranges, the open-burner cooking surface, have distinct failure modes from commercial ovens. This page covers the range top (igniters, gas valves, thermocouples, burner orifice cleaning, spark modules, open burner assemblies) and the full restaurant range: the standard oven cavity below the burners, French tops, and integrated salamanders. For a range oven that won't heat, see range oven not heating. For standalone ovens (convection ovens, deck ovens, combi ovens), see our Commercial Oven Repair page.
Southern California has one of the most diverse commercial kitchen landscapes in the US, from the high-BTU wok ranges running 150,000–200,000 BTU/burner in LA's Chinatown and Koreatown, the San Gabriel Valley Chinese restaurants, OC's Anaheim and Garden Grove Korean/Vietnamese corridors, and the Inland Empire's growing Asian foodservice clusters; to the charbroilers in Beverly Hills, Newport Beach, and Westlake Village steakhouses; to the standard 6-burner Vulcan or Garland ranges in every independent restaurant on the East Hollywood corridor and across all seven counties. We repair all of these, and we come prepared for high-BTU burner work. Same-day priority dispatch, BHGS #A49573.
If you smell gas near your commercial stove: call your gas utility, SoCalGas at 1-800-427-2200 across most of Los Angeles, Orange County, Ventura, and parts of San Bernardino; Southwest Gas at 1-877-860-6020 for Riverside, Anaheim, Long Beach, and parts of SB. They respond quickly, shut off gas safely, and confirm the area is clear, at no charge. Once the gas is secured, call us at (424) 325-0520 for the mechanical repair. Gas utility first, appliance repair second.

Commercial Oven Repair Los Angeles →03, Commercial Range Types We Service
Every commercial cooking surface configuration in Southern California kitchens
Standard Gas Ranges (6–10 Burner)
The most common commercial range in Southern California independent restaurants. Vulcan V-series, Garland G-series, Southbend, typically 30,000–35,000 BTU per burner. Igniter, gas valve, thermocouple, orifice.
High-BTU Wok Ranges
75,000–200,000 BTU per burner for wok cooking. Chinese, Korean, Vietnamese restaurants in LA's Chinatown, Koreatown, San Gabriel Valley; OC's Anaheim/Garden Grove corridor; IE's growing Asian foodservice clusters. Larger orifice, higher-capacity gas valves, different repair approach from standard ranges.

Charbroilers
Gas charbroilers for steakhouses, burger restaurants, and specialty grills. Radiants, burner assemblies, gas valve, igniter. Beverly Hills, Newport Beach, and Westlake Village fine dining and casual restaurant charbroiler service.
Combination Ranges
Full commercial range with burner section above and oven section below. We repair both sections, burner surface and oven chamber, on the same visit when needed.
Commercial Induction Ranges
Commercial induction cooktops for Southern California kitchens electrifying their cooking suites, increasingly common in new restaurant buildouts across LA, OC, Ventura, and IE. Control board, induction coil, cooling fan.
LA Koreatown / Chinatown / San Gabriel Valley + OC Anaheim/Garden Grove + Inland Empire Asian foodservice clusters, the wok range capital of the western US
Southern California has the largest concentration of Chinese, Korean, and Vietnamese restaurants outside of Asia, and these cuisines demand high-BTU wok burners that standard commercial range repair technicians often haven't worked on. A wok range running 150,000 BTU per burner requires larger orifice jets, higher-capacity gas supply lines, and different igniter assemblies than a standard 35,000 BTU burner.
Common failure modes on high-BTU wok ranges: clogged wok ring orifice jets from carbon buildup (high-BTU burners produce more carbon than standard burners), failed high-capacity gas valve, igniter failure from the intense heat environment. We carry appropriate parts and tools for high-BTU burner repair across all seven Southern California counties. When you call, mention "wok range" and we'll confirm the right tech and parts for your visit.
03.5, Restaurant Range Configurations
Every standard commercial range layout in LA kitchens, burner top and oven below
Restaurant ranges pair the burner top with a standard oven cavity below, and heavy-duty lines add a French top or an integrated salamander. We service the whole unit on one visit.

04, Common Failures
What our technicians diagnose most often in Southern California commercial stoves
Across our Southern California commercial stove and range calls, the failures cluster predictably. Open-burner ignition faults — worn thermocouples, clogged pilots, failed spark igniters — are the most frequent call our techs run. Weak, yellow, or uneven flame from clogged orifices or a low-pressure gas supply is the next most common. Zone or burner-bank gas-valve failures that drop a whole section come less often but stop the most cooking surface at once. On electric and induction ranges, burned-out surface elements and failed infinite/induction switches lead, followed by induction control-board faults. High-BTU wok ranges add their own pattern — heavy-duty pilot and jet burner wear from running at 75,000–200,000 BTU. The cards below run roughly in that order of how often we see them.
Burner Won't Light
Three causes in order of frequency: (1) failed igniter or spark module, no spark visible when attempting ignition; (2) clogged burner orifice, spark present but gas can't flow; (3) failed gas valve, gas not reaching the burner. Try removing the burner cap and grate and cleaning debris first. If the orifice hole appears blocked, a cleaning service may resolve it without parts replacement.
Weak or Yellow Flame
A properly burning gas burner produces a blue flame with a defined cone. Yellow or orange flame indicates incomplete combustion, most commonly from a clogged or partially blocked burner orifice, or a burner cap misaligned after cleaning. A weak flame regardless of color suggests insufficient gas pressure reaching the burner, pointing to a partially failed gas valve.
Pilot Light Won't Stay Lit
Standing pilot systems on older commercial ranges use a thermocouple, a temperature sensor that detects the pilot flame and allows the main gas valve to stay open. When the thermocouple fails, the pilot lights but the main gas valve closes and the burner won't stay on. Thermocouple replacement is a $80–$150 repair. Don't bypass or tape the thermocouple, it's a safety device.
Burner Ignites Then Goes Out
On electronic ignition systems, this usually indicates the flame sensor (sometimes called a thermocouple or flame rod depending on the system) isn't detecting the flame and cutting off the gas valve. The flame starts, the valve opens, then closes when the sensor doesn't confirm sustained combustion. Sensor cleaning or replacement resolves this in most cases.
Uneven Heat / One Section Not Working
On a multi-section range (6-burner, 8-burner), one side or section not lighting while others work normally usually indicates a zone gas valve failure rather than individual burner issues. Zone valves control multiple burners; when a zone valve fails, all burners in that zone go down together. Useful diagnostic: if all three left burners fail simultaneously, it's likely a zone valve, not three separate igniter failures.
Griddle Temperature Inconsistent
Commercial griddle thermostat drift, the thermostat controls griddle surface temperature and wears out over time. A griddle showing 350°F but cooking inconsistently at 300°F or 420°F has a drifted or failing thermostat. We calibrate against a calibrated probe before condemning the thermostat, since sometimes the display is inaccurate rather than the heating system itself.
05, Gas Safety Protocol
Gas smell at your commercial stove, the right sequence
This is the correct order of operations. Most operators don't know that the gas utility responds faster and at no charge.
Turn off the stove and move staff away. Don't operate electrical switches that could create a spark.
Call your gas utility: SoCalGas 1-800-427-2200 (LA, OC, Ventura, parts of San Bernardino) or Southwest Gas 1-877-860-6020 (Riverside, Anaheim, Long Beach, parts of San Bernardino). They respond quickly, shut off gas supply safely, and verify the source, at no charge to you.
Ventilate the space, open kitchen doors and windows once you're sure there's no ignition source.
Call us at (424) 325-0520 once gas is secured. We diagnose the failed component and repair same day.

07, Recent Repairs
What our technicians actually fixed recently
"Two wok burners won't light, carbon buildup, orifice completely blocked"
Clogged wok ring orifice jets on two of three burners of an American Range wok range running 150,000 BTU per burner. The orifice jets on high-BTU wok burners accumulate carbon at a much faster rate than standard commercial burners, the intense heat conditions and wok cooking technique (sauce and oil splashing directly into the flame) builds carbon deposits in the jet orifice over months.
"Left side three burners completely dead, right side works fine"
Zone gas valve failure on a Garland 6-burner range at a Newport Beach steakhouse, the valve controlling the left-side burner zone had failed closed, cutting off gas to all three left burners simultaneously. Classic zone valve failure presentation: three burners go down at the same time rather than one. The restaurant had been running dinner service using only the right three burners, slowing their line and affecting ticket times.
"One burner ignites but goes out after 5 seconds"
Failed flame sensor on a Vulcan V6B electronic ignition range at a Westlake Village bistro, the flame rod (a probe that detects the presence of flame and holds the gas valve open) had corroded and was no longer producing adequate ionization current to signal the control board. The burner would ignite, the control board would check for flame confirmation, fail to detect it, and cut the gas valve, all within a few seconds.
"Pilot light keeps going out, burners won't stay lit"
Failed thermocouple on a standing-pilot Imperial range, the thermocouple generates a small millivolt signal when heated by the pilot flame, which holds the main gas safety valve open. When the thermocouple fails, the valve defaults closed (the safe state), and no burners will ignite or stay on. The restaurant had been relighting the pilot every 30–45 minutes until it stopped staying lit at all.

09, Frequently Asked Questions
Commercial range and stove repair, what Southern California operators ask us
How much does commercial stove repair cost?
Commercial diagnostic is $120, applied to repair if approved. Most repairs run $150–$500. Igniter, thermocouple, gas valve, orifice cleaning, or flame sensor is in this range. Zone valve work runs higher. Written estimate before any work begins.
Which areas of Southern California do you cover for commercial stove repair?
Same-day across Los Angeles, Orange, Ventura, Santa Barbara, San Bernardino, Riverside, and San Diego counties, Koreatown and Chinatown LA wok ranges, San Gabriel Valley Chinese restaurants, Anaheim and Garden Grove OC Korean/Vietnamese kitchens, Thousand Oaks Conejo Valley restaurants, Rancho Cucamonga and Riverside Inland Empire foodservice. Ten service territories total. Vulcan, Garland, Southbend, Imperial, gas-certified across the entire footprint. BHGS #A49573.
My commercial gas stove smells like gas, what do I do?
Call your gas utility first, SoCalGas at 1-800-427-2200 across most of Los Angeles, Orange County, Ventura, and parts of San Bernardino; Southwest Gas at 1-877-860-6020 for Riverside, Anaheim, Long Beach, and parts of SB. They'll shut off gas safely at no charge and confirm the area is clear. Then call us at (424) 325-0520 for the mechanical repair. Gas utility first, appliance repair second.
My commercial burner won't light, what should I check first?
Remove the burner cap and grate and check for debris or carbon buildup in the burner orifice hole. A clogged orifice is the most common cause and cleans up in minutes. If the orifice is clear and there's no spark, that's an igniter. If there's a spark but no flame, that's a gas valve or clogged orifice.
Do you repair wok ranges and high-BTU commercial ranges?
Yes. High-BTU wok ranges (75,000–200,000 BTU/burner) are a significant part of our Southern California service calls, LA's Chinatown/Koreatown/San Gabriel Valley, OC's Anaheim/Garden Grove, Inland Empire's Asian foodservice clusters. When you call, mention "wok range" so we bring the appropriate parts and tools.
What's the difference between commercial stove and oven repair?
Stove repair covers the open-burner cooking surface, igniters, gas valves, thermocouples, orifices. Oven repair covers the enclosed cooking chamber, heating elements, convection fans, deck oven systems. Most commercial ranges have both; we repair both on the same visit when needed. See our Commercial Oven Repair page for oven-specific issues.
Do you repair Vulcan, Garland, and Southbend commercial ranges?
Yes. Vulcan, Garland, Southbend, Imperial, and Montague are our most common Southern California service brands. Parts for Vulcan and Garland carried on service vehicles; others sourced same-day.
When does it make sense to repair vs replace a commercial range?
Commercial ranges last 12–20+ years with proper maintenance. Repair almost always wins. New 6-burner Vulcan or Garland ranges run $4,000–$9,000+; high-BTU wok ranges $6,000–$15,000+; charbroilers $3,000–$7,000. A $400–$700 zone valve replacement on a $7,000 range with another decade of life is straightforward math. We tell you directly when a unit has reached end-of-life, usually only after a full burner-bank gas-valve assembly fails on a unit already 20+ years old.
My commercial stove burner won't light, what fails most often?
On a commercial gas stove a burner that won't light is most often a worn thermocouple, a clogged pilot, or a failed spark igniter — those three are the largest share of our Southern California stove calls. The thermocouple is the safety sensor that holds the gas valve open once the pilot is lit; as it weakens the burner lights then dies, and replacement runs $150–$300. A clogged pilot or orifice from grease and carbon buildup is a clean-and-clear job, and a failed spark igniter or module on electronic-ignition ranges runs $180–$340. If a whole burner bank is dead at once, that points to a zone gas-valve assembly rather than a single burner. Our techs check the thermocouple, pilot, orifice, and igniter in that order. Most repairs land in the $200–$700 range; the $120 commercial diagnostic is waived when you approve the repair.
Why is my commercial range flame weak, yellow, or uneven?
A weak, yellow, or uneven flame almost always means a clogged burner orifice or a gas-supply pressure problem rather than a failed part. Grease, carbon, and food debris partially block the orifice, so the burner starves for gas and the flame goes lazy and yellow instead of crisp and blue — a yellow flame also signals incomplete combustion and should be addressed promptly. Low incoming gas pressure, a partly closed valve, or a failing regulator produces the same symptom across several burners at once, and on high-BTU wok ranges it shows up faster because the jet burners run so hard. Our techs clean and re-jet the orifices, verify manifold pressure against the rating plate, and check the regulator. Cleaning and pressure correction are typically lower-cost than parts; the $120 commercial diagnostic is waived when you approve the repair.
My salamander broiler igniter doesn't work. Can you fix it?
Yes. The salamander broiler is integrated with the range top and uses a similar igniter and thermocouple system, just mounted overhead. Igniter replacement runs $260–$440. A lot of repair shops in LA won't take salamander work because they're not set up for the overhead mounting and the higher heat-zone tolerances. We do, and we keep the common salamander igniters on the van.
Vulcan vs Garland vs Wolf, which commercial range is most common in LA?
Vulcan VR series is the most common range we see in LA, mid-priced, durable, parts readily available. Garland Master Series sits a tier above at the premium end. Wolf Challenger XL is high-end ($15,000+ ranges in steakhouses and hotel kitchens). American Range, made in Cypress CA, shows up often in LA-area kitchens because the manufacturer is local, easier parts logistics and direct factory tech support.
Do you service Wolf commercial restaurant ranges?
Yes. Wolf commercial restaurant equipment is a separate product family from residential Wolf cooking, with different parts catalogs and different service procedures. Challenger XL CHSC60 and CHSC72 are the Wolf ranges we see most often in LA. We know the difference between commercial Wolf and residential Wolf parts, which matters because they don't cross-reference.
Can you calibrate my commercial range oven thermostat?
Yes. We use certified thermocouples and digital calibration equipment. Drift is typical at year 4–7. If the thermostat is drifted but mechanically sound, recalibration runs $290–$540 and saves the cost of a full replacement. If the thermostat is shot, replacement is in the same range. We test before condemning the part.
My range gas pressure is inconsistent. What's the issue?
LA gas pressure varies by neighborhood and feeder line. Pre-2000 LA gas infrastructure occasionally delivers below 7 inches water column, which is below the minimum spec for a heavy-duty commercial range. We always diagnose pressure first with a manometer at the range inlet before condemning a regulator, igniter, or gas valve. About one in five weak-flame calls turns out to be supply pressure rather than the range itself.
What's the difference between a commercial range and residential cooking equipment?
BTU output (25,000–35,000 commercial vs 12,000–18,000 residential per burner), heavy-gauge steel construction built for continuous 12–16 hour service vs intermittent home use, oven temps holding 500–550°F continuous, integrated salamander broiler options, and parts catalogs designed for component-level service. A commercial range lasts 15–20+ years with proper service. A residential range pushed into restaurant duty fails inside 18 months.
